Super easy tasty roast lemon chicken and green beans

1. Preheat oven to 350 degrees and wash your hands.
2. Put 1 Tablespoon of olive oil in baking dish and spread it around with a spatula.
3. Wash and then snap off the end bits of the green beans and break the beans in half so they’re bite size.
4. Add 3 Tablespoons good olive oil to the green beans.
5. Add 1/2 teaspoon salt to the green beans.
6. Add 1/2 teaspoon fresh ground black pepper to the green beans.
7. Slice one lemon into thin slices. Juice the other (not more than 1 ounce) and pour over the green beans, and then slice the juiced hulls too. Use all the lemon to line the baking dish.
8. Peel the garlic, chop up the 4 or 5 biggest cloves and add them to the green beans. Tuck the remaining cloves in around the outside edges of the baking dish.
9. Open the chicken package.
10. Just stick your hands right into those green beans and toss ‘em around, getting olive oil all over them. Then, giving them a little shake to loosen any drippy oil as you lift them from the bowl, spread them out on top of the lemon in the baking dish.
11. Dredge the chicken breasts in the oil mixture still in the bowl and rest them atop the green beans.
12. Pour any remaining oil over the chicken breasts.
13. Wash your filthy paws.
14. Put the baking dish in the oven until a meat thermometer shows 165 degrees in the center of each chicken breast. Takes around half an hour or so.

Devour delightedly with bread or couscous or pasta or quinoa.

(Edited 2/17/12 to bring it down to 4T total of olive oil. Was just a bit much otherwise, as I’ve learned in the multiple times I’ve made this since.)
(Edited October 13, 2012 to change to 165 for meat done temperature since these are breasts rather than whole birds.)

We were supposed to use pancetta but ended up getting bacon instead – still tastes quite good!
