The last time I bought chicken thighs, I skinned them before portioning them into freezer bags and freezing. I almost threw out the skins as I normally would, but this time I thought I could keep them around and maybe bread and fry them up. I *love* the skin on fried chicken, so I thought this would be a great way to use the skin instead of wasting it.

I was curious to see if anyone had made any recipes for fried chicken skins, and came across a discussion thread where people were claiming their love for fried or baked chicken skins (it was a low-carb discussion forum). One post described baking them in a manner similar to how I bake bacon (it’s the easiest way to prepare bacon, IMO). I thought that would be an easier method of preparation than breading and then frying the skins, so I decided to try it today. Oh. My. Gosh. So good!

I set the oven to 375 deg F, laid out three frozen pieces of chicken skin on a foil-lined cookie sheet, and sprinkled the skins with garlic sea salt on the top side. Popped them into the oven for 6 minutes, flipped, more garlic sea salt and some fresh ground pepper, 6 more minutes. The largest piece of skin wasn’t golden brown in the middle so I flipped the skins again, and baked for 4 minutes more. After draining on a plate lined with paper towels, I plated them up onto a clean plate for a photo shoot. :) They turned out as delicious and crispy as I had hoped! I wish I had baked more than 3 pieces because they didn’t last very long. :) I figured I’d try 3 first as an experiment and make more later. Well, I’m definitely going to make more later!

If you like the skin on fried chicken, or if you like pork rinds (chicharron!), I highly recommend trying baking or frying up chicken skins on their own. Very, very tasty!

I am about to move into my own house next Fall, so I’m practicing my cooking! I made grilled southwest chicken and black bean burritos for my family tonight. The stuff in this picture is the beans/chicken/onions/secret sauce that went in the burritos.

It was definitely a learning experience to say the least, but I was happy to taste the final product. It was pretty darn tasty if I say so myself!

Gotta love fresh ingredients and cooking things yourself :)
