Fire and forget chicken

Recipe inspired by Thomas Keller’s simple roast chicken. No basting, bird flipping, or other theatrics required. Just make sure that your kitchen is well-ventilated.

Preheat oven to 450°C. Wash chicken thoroughly inside and out. Dry the bird thoroughly. If you’re doing it the Thomas Keller way, the more water you get rid of, the crispier the skin. Here it doesn’t matter as much, cause I’m stuffing it.

Sprinkle kosher salt inside and out, I’m guessing around 1 tbsp. I’m not doing it the Keller way, so I stuck two small tomatoes inside the cavity with some rosemary and tarragon.

Truss the bird, put it in a cast-iron skillet and put it in the oven and forget about it for ~1 hour. I added some quartered tomatoes to the skillet and sprinkled some leftover herbs over the bird at the 45 minute mark.

Take it out, let it rest for about 15 minutes, et voila! Make gravy with drippings if desired.
